Oh dear... Im such a procrastinator. I keep saying I'm going to write but it's soooo hard to keep up; between juggling Ms. O and the other 4 legged children & not to mention the Bearded child, full time work and school and on top of that I have to clean and cook!!! Leaves me with no energy whatsoever!!!
Anyways, I feel that I've been putting this off for quite some time, its supposed to be therapeutic lol
I'm craving cookies!! And everyone knows what a perfect marriage are marshmallow & chocolate, specially if the third wheel happens to be graham crackers!!

What you need:

1 c of unsalted butter (softened)
1/2 c brown sugar
1 egg or (1 Tb of flaxseed meal + 3 Tb of water as egg sub)
1 ts vanilla
1 c of wheat flour
1 c of finely crushed graham crackers
1/8 ts of salt
Mini Marshmallows
Chocolate Chips

Preheat oven @ 325.
Beat butter and sugar until light and fluffy. Beat in egg or flaxseed depending what you chose to use and vanilla, add flour, graham crackers and salt beat until dough becomes thick and stiff.
Shape dough into little balls (I use a melon baller so they are all the same size) into a cookie sheet about 11/2-2 in apart and with your thumb make an indentation in the middle. And Bake for 10-12 mins until edges are just barely brown, lightly press 2-3 marshmallows into each cookie and bake for additional 1-2 minutes.
Finally!! Take those cookies out of the oven and top each cookie with a chocolate chip or two, let it stand for a couple of minutes and with a butter knife gently spread the softened chocolate over marshmallows and let them stand til the chocolate is set.

And YUM!!! These are my favorite cookies of ALL TIME!!


*You can use all purpose flour if Wheat Flour is not available or you don't like to work with it, but increase flour amount to 1 1/3 c instead.

WET, HOT, SUMMER...

This weather man, I tell ya...

We live in a 1920's wood house, it gets so hot in here I feel like I'm in a russian sauna full of sweaty crotches... ok, ok, so I'm exaggerating.

In any event, during summer I avoid cooking indoors like the plague, the oven and stove are out of service during summer. I turn on the a/c but the humidity is too much.

So how does this mommy extraordinaire do you ask????
I grill and I make a lot of hearty salads. I use a lot of asian noodles because some of the rice noodles don't require hot water to become soft and chewy :D God bless the Asians for that.

Today I went with something much more traditional that I hold very dear to my heart, it just reminds me of happy childhood times; when all my cousins and I were younger. No career worries, no kids, no nothing, just simpler times.
We would jump into the inflatable pool while the grown-ups drank beer (hey we are Mexican, I never said we were perfect) and watched us horse play. My mom yelling to be careful and straight out embarrassing me in front of everyone...
And then there was shrimp ceviche, among other equally yummy dishes that everyone brought from home.

I love shrimp in every possible way, I even like it raw!! RAWWW!!!!! Ok sorry, sometimes I get overly excited over food, it's a sickness *insert dramatic music*

Shrimp Ceviche, my best friend in my teen years after sneaking out the window to see my bff's and coming back home stupid drunk, a mother knows her child... or she would hear me come back in, either way. But the point is that she would have ceviche ready for when I was done puking, awww the memories...

Without any further ado!!!
I give you my creation!!!!

Shrimp Ceviche

*1 lb of raw deveined, peeled and chopped into 1/4 inch pieces of medium sized shrimp
*1/2-1 raw onion finely chopped
*The juice of 10-12 large limes
* 2 Tomatoes finely chopped
* 1 small bunch of cilantro finely chopped
* 2 -3 tbs of ketchup
* 2 Cloves of garlic finely chopped
* 5-6 Serrano Chiles finely chopped, deveined and seeded (optional)
* salt and pepper to taste

Clean the shrimp, chop them and throw them into the lime juice with the salt first. Set aside in the fridge. While the shrimp "cooks" in the salted lime juice, chop the rest of the veggies and stir them into the shrimp marinade, stir in the ketchup and adjust taste with salt and pepper. Let sit for about 1 hour in the fridge.







Serve over tostadas with baja sauce and enjoy!

Baja sauce:

50% sour cream
50% Mayo

Mix them together and voila, Baja Sauce! Yum!

OK, so I lied I havent been here as much...

I had a revelation today! Yes a revelation!!
And it reveled food!
So last night I kinda fell asleep on the couch, which is a usual lately; and I forgot to take protein out of the freezer... And I work the overnight shift tonight when you add two and two together, no choice but to go to the pantry and I came up with tuna patties!!

2 cans of 7 oz of tuna in water
1 bunch of green onions diced finely
2-3 large eggs
salt and pepper

Break the tuna apart until it's flaky and not chunky anymore, add the onions and eggs, season to taste and mix thoroughly. Set aside.

Grind and mash:
1-2 cloves of garlic
3-15 chiles bolita (similar to chile piquin)
1-2 cans of tomato sauce

In a sauce pan add 1 tbs of oil, fry the paste of chili/garlic/tomato, add water until soupy but thick, season with knorr and let it simmer for about 20 minutes. Set aside.

For the rice:

Melt 1-2 tbs of butter in a pot, add 1 cup of rice and fry uncooked rice until no longer transparent.
Add 1/2c of corn kernnel, and 1 1/2 cups of water, season with knorr to taste, let it come to a boil uncovered, once its at a rolling boil, close with a tight lid, turn heat to lowest and let it cook for 20 minutes. Turn heat off after 20 minutes and let rice sit for 10 minutes before serving. DO NOT OPEN THE LID FOR 10 MINUTES!!!!!!!!!!!

For the patties:

Form patties with the tuna mixture and fry on both sides for about 2-3 minutes on a medium high heat.

Serve bed of rice with 2-3 patties and ladder in sauce.

THE YUM!!!!






For dessert, the best cookies ever!!

I love oatmeal, I love berries, I love marshmallows, I love coconut, I love nuts, I love, I love, I love!!!!

3/4 cup wheat flour
1 1/2 cup of rolled oats
1/2 ts of ground cinnamon
1/2 ts of ground cardamom
1/2 ts of baking powder
1/2 ts of baking soda
1/8-1/4 of salt
1/4 c of REAL maple syrup (no aunt jemima crap)
1 mashed banana
1/4 of melted butter
3 tbs of heavy cream
2 ts of egg replacer
1 ts of vanilla extract
1 ts of almond extract
1 c of hazelnuts
1 c of blueberries
1 peach skinned/pitted and diced
1/4 c of coconut flakes
Mini marshmallows

Mix the first 7 ingredients together. Mix the next 7 ingredients together. Incorporate the dry ingredients into the wet, once mixed well and most lumps are gone, fold the nuts,berries, peach and coconut. Drop them by the spoonful into a cookie sheet lined with parchment paper, top with raw sugar and bake for 11-13 minutes at 350 degrees.
Take them out of the oven top with 2-3 mini marshmallows and put in broiler for 1-2 minutes.
Cool down and enjoy!! HMMMMMM Delish!

Let's try this again...

Ok. Life is crazy enough as it is... Add a child into the mix, with a few pets and a husband that sometimes acts like a 5 year old, well my life is similar to like thousands of millions of other women!

Ok so the truth is that my life is nothing special; I'm an extraordinary veterinary technician by day and by night I'm the amateur chef at home :)

I love to cook and lately I have been venturing into the BIG "B" (Baking) I'm a great cook, but I have always sucked at baking, I'm getting better though (with a few minor burns here and there, and maybe throwing away 30 zillion batches of you name it lol)
Anyways, I have been a very bad blogger these past few years, that I decided to erase everything and start over, this time around though I will try to make a post a day or at least every few days. I think of it as my summer resolution, since I had none this "New Year" Ha, Ha!

Today the kitchen was closed for memorial day weekend HAHA!


But I leave you guys with happy thoughts regardless ^^^^^^^^^^^^ hmmmm smores cookies ;)
